When I finished preparing my salad for lunch today, I realized that it would make a lovely picture. I like the brilliant red of the pepper and yellow mango against the paler greens. The Greek cheese provides a wonderful foil for the rest of the ingredients. I dressed it with a balsamic vinaigrette and it was absolutely delicious.
